Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 cup whole milk, warmed
  • ¼ cup granulated sugar
  • 2¼ tsp active dry yeast
  • 2 large eggs
  • 6 tbsp unsalted butter, melted
  • 1 tsp salt
  • 1 tsp vanilla extract
  • ¾ cup brown sugar
  • 2 tbsp ground cinnamon
  • 6 tbsp soft butter
  • Optional spices: nutmeg or cardamom
  • 4 oz cream cheese
  • 1 cups powdered sugar
  • ½ tsp vanilla
  • 13 tbsp heavy cream
  • 1 cup powdered sugar (for simple glaze)
  • 12 tbsp milk (for simple glaze)
  • ½ tsp vanilla (for simple glaze)

Instructions

  1. Activate Yeast: Warm the milk until lukewarm, whisk in yeast and a pinch of sugar, let sit 5–10 minutes until foamy.
  2. Mix Wet Ingredients: Combine eggs, melted butter, vanilla, remaining sugar, and foamy yeast mixture in a bowl.
  3. Form Dough: Add 3½ cups flour and salt, knead 8–10 minutes until smooth and tacky.
  4. First Rise: Place dough in greased bowl, cover, and let rise 60–90 minutes until doubled.
  5. Prepare Filling: Mix soft butter, brown sugar, and cinnamon together.
  6. Shape Rolls: Roll dough into 12×18-inch rectangle, spread filling, roll tightly, cut into 12 spirals.
  7. Second Rise: Arrange spirals in greased 9×13 pan, cover, and rise 30–45 minutes.
  8. Bake: Bake at 350°F (175°C) for 22–28 minutes until golden and 190°F (88°C) internal.
  9. Finish: Ice while warm with cream cheese frosting or simple glaze.

Notes

For no-yeast version, substitute baking powder and buttermilk for quicker, biscuit-like rolls. For sourdough, use ½ cup ripe starter and reduce milk. Dairy-free? Use vegan butter and almond or oat milk. Gluten-free? A 1:1 blend with psyllium husk helps elasticity. Nutrition estimated.
