- 150 g (2/3 cup) plain Greek yogurt
- 1 large lemon, zest and juice (≈60 ml / 1/4 cup)
- 4 cloves garlic, minced (≈12 g)
- 2 Tbsp (30 ml) extra-virgin olive oil
- 1 Tbsp (15 ml) apple cider vinegar
- 2 tsp (10 g) dried oregano
- 1 tsp (5 g) dried thyme
- 1 tsp (5 g) smoked paprika
- 1/2 tsp (2.5 g) ground black pepper
- 1 tsp (5 g) sea salt
- 1 tsp (5 g) sumac
- Fresh oregano sprigs (for garnish)
- Lemon wedges (for garnish)
Instructions
- Prepare Marinade: Whisk together yogurt, lemon zest, juice, garlic, olive oil, vinegar, oregano, thyme, paprika, pepper, salt, and sumac.
- Marinate Chicken: Pat chicken dry, coat with marinade, and refrigerate for 2-4 hours.
- Preheat & Prepare: Preheat oven to 400°F (200°C), line a baking sheet with parchment paper, and arrange chicken skin-side up.
- Bake Chicken: Bake for 35-40 minutes, until internal temperature reaches 165°F (74°C).
- Broil (Optional): Broil for 2-3 minutes for extra char, watching closely.
- Rest Chicken: Let rest for 5 minutes before serving.
- Plate & Garnish: Drizzle with olive oil, arrange chicken, spoon pan juices, garnish with oregano and lemon wedges.
