Description
This family-favorite kebab wrap recipe features seasoned ground meat and fresh vegetables, all wrapped in soft tortillas with a bright, tangy garlic yogurt sauce. It is a quick, healthy, and satisfying meal perfect for busy weeknights.
Ingredients
- 1 lb lean ground lamb, beef, or chicken (or ground turkey)
- 1 medium onion, diced
- 2 bell peppers, sliced
- 1 tsp cumin
- 1 tsp coriander
- 0.5 tsp paprika
- 0.5 tsp garlic powder
- 6–8 soft flour tortillas or pita bread (or large lettuce leaves or whole wheat wraps)
- 1 cup full-fat Greek yogurt (240g)
- 2–3 cloves fresh garlic, minced
- 1 Tbsp fresh lemon juice
- 2 Tbsp chopped fresh mint or dill
Instructions
- Sauté Meat and Onion: In a large 10-inch skillet over medium-high heat, brown the ground meat with diced onion until cooked through and lightly caramelized (about 8-10 minutes). Drain any excess fat.
- Add Spices: Stir in the cumin, coriander, paprika, and garlic powder with the meat, cooking for another minute until the spices are aromatic.
- Cook Peppers: Add the sliced bell peppers to the skillet and sauté for 5-7 minutes until they are tender-crisp and slightly softened.
- Whip Garlic Yogurt Sauce: While the meat mixture cooks, whisk together the Greek yogurt, minced fresh garlic, lemon juice, and chopped mint or dill in a small bowl until smooth and creamy.
- Warm Wraps: Gently warm your tortillas or pita bread until soft and pliable (microwave for 15-20 seconds or pan-fry briefly, about 30 seconds per side).
- Assemble and Serve: Spread a generous layer of the garlic yogurt sauce onto each warmed wrap. Top with a scoop of the seasoned meat and vegetable mixture, then fold or roll tightly. Enjoy immediately.
Notes
For a thicker sauce, drain Greek yogurt through cheesecloth for 30 minutes before mixing. For dietary variations, use spiced chickpeas or lentils as a vegan option, or large lettuce cups instead of tortillas for a keto-friendly meal. If the meat mixture seems dry, add a splash of broth or tomato paste during cooking. Use high-quality lean ground meat and fresh garlic and herbs for the best flavor.
