keto biscuit recipe Golden Cheddar Drop
- Total Time: 40 minutes
- Yield: 12 biscuits 1x
- Diet: Keto, Low-Carb
Description
These Golden Cheddar Drop Keto Biscuits are a comforting, savory low-carb dish with a soft interior and golden, cheesy crust. They are easy to make and perfect as a versatile side, snack, or for healthy meal prep.
Ingredients
- 2 cups almond flour
- 1.5 cups shredded cheddar cheese
- 1 tablespoon baking powder
- 2 large eggs
- 0.5 cup melted unsalted butter
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
Instructions
- Prep Oven & Pan: Preheat your oven to 375F (190C). Line a standard baking sheet with parchment paper.
- Combine Dry Ingredients: In a spacious bowl, whisk together 2 cups almond flour, 1 tbsp baking powder, 1 tsp garlic powder, and 0.5 tsp salt until well combined and lump-free.
- Add Wet Ingredients: Stir in 0.5 cup melted butter, 2 large eggs, and 1.5 cups shredded cheddar cheese. Mix gently until just combined; the dough will appear thick and clumpy. (If it looks too dry or crumbly, splash in 1-2 Tbsp unsweetened almond milk.)
- Drop & Bake: Drop 12 equal-sized spoonfuls (about 2 tablespoons each) onto the prepared baking sheet, leaving space between them. Bake for 15-20 minutes, or until puffed, golden brown on the edges, and firm to the touch when pressed lightly.
- Cool & Serve: Carefully transfer the baked biscuits to a wire rack. Let them cool slightly for 5-10 minutes before serving warm; this helps them set and improves texture.
Notes
To manage dietary needs, cheese can be swapped for Monterey Jack, Colby, or dairy-free shred. For nut allergies, coconut flour (use 0.25 of the amount, add more liquid) or a gluten-free blend can be used. Ghee or solid unsweetened coconut oil can replace butter for dairy-free options. For enhanced flavor, add a pinch of black pepper or dash of smoked paprika. To reduce calories, decrease cheese by 0.25 cup or use reduced-fat cheddar. Avoid overmixing the dough, which can lead to tough biscuits, and do not open the oven door too early (first 10 minutes) to maintain fluffiness.
