Description

This Key Lime Cake Recipe Bundt Glaze is a show-stopping yet simple treat, promising a perfectly moist and tangy cake with a zesty lime aroma, perfect for family-friendly entertaining.

Ingredients

Scale
  • 2.5 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 1 cup buttermilk (or 1 cup milk + 1 Tbsp lemon juice or white vinegar)
  • 0.25 cup Key lime juice (for cake)
  • 2 tablespoons Key lime zest
  • 1 teaspoon vanilla extract
  • 1.5 cups powdered sugar (for glaze)
  • 34 tablespoons Key lime juice (for glaze)

Instructions

  1. Prep Your Pan: Generously grease a 10-inch bundt pan with butter or baking spray with flour. Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. Combine Wet Ingredients: In a separate medium bowl, cream softened butter and sugar on medium speed for 3-5 minutes until light and fluffy. Beat in eggs one at a time, allowing each to incorporate, then mix in vanilla extract, Key lime zest, and Key lime juice.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet, alternating with the buttermilk. Begin and end with the dry ingredients. Mix on low speed until just combined. (If your batter looks too thick, splash in 1-2 tablespoons more buttermilk.)
  5. Bake Cake: Pour the batter evenly into the prepared bundt pan. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Cool Cake: Let the freshly baked cake cool in the bundt pan on a wire rack for 10-15 minutes. Then, invert the cake onto the wire rack to cool completely.
  7. Make Glaze: In a small bowl, whisk together 1.5 cups powdered sugar and 3-4 tablespoons Key lime juice until it forms a smooth, pourable consistency. Adjust for desired thickness.
  8. Glaze and Serve: Once the Key Lime Cake is completely cool, generously drizzle the Key Lime Glaze over the top. Allow the glaze to set for about 15-20 minutes until slightly firm, then slice and serve.

Notes

A stand mixer makes quick work of mixing. Zest your Key limes directly into the wet ingredients for maximum essential oil release and intense flavor. For dietary swaps, consider a 1:1 gluten-free flour blend, plant-based butter and buttermilk, or reducing sugar.
