Description

Experience the vibrant flavors of Lebanon with this comforting chicken dish! Tender chicken thighs simmered in a rich tomato and pomegranate molasses sauce, finished with fresh herbs and a creamy yogurt drizzle.

  • 1.2 kg (2.6 lb) chicken thighs, bone-in, skin on
  • 2 tbsp (30 ml) olive oil (searing)
  • 1 tbsp (15 ml) olive oil (sauce)
  • 1 large onion, finely chopped (200 g / 7 oz)
  • 4 garlic cloves, minced
  • 1 tsp (5 g) ground cumin
  • 1 tsp (5 g) ground coriander
  • 1 tsp (5 g) smoked paprika
  • 1 tsp (5 g) ground allspice
  • 0.5 tsp (2 g) ground cinnamon
  • 0.5 tsp (2 g) ground black pepper
  • 1 tsp (5 g) sea salt
  • 1 tsp (5 g) sumac
  • 1 tsp (5 g) orange zest
  • 2 tbsp (30 g) pomegranate molasses
  • 400 g (14 oz) diced tomatoes, drained
  • 120 ml (½ cup) vegetable broth
  • 2 tbsp (30 ml) lemon juice
  • ¼ cup (15 g) chopped parsley
  • ¼ cup (15 g) chopped mint
  • 2 tbsp (15 g) toasted pine nuts
  • 2 tbsp (15 g) pomegranate arils
  • ¼ cup (60 ml) Greek yogurt

Instructions

  1. Season Chicken: Combine spices and generously season chicken thighs.
  2. Sear Chicken: Sear chicken skin-side down for 4-5 minutes per side.
  3. Sauté Aromatics: Sauté onion until translucent, then add garlic.
  4. Bloom Spices & Deglaze: Stir in orange zest, then deglaze pan with broth.
  5. Build Sauce: Add tomatoes, pomegranate molasses, and lemon juice.
  6. Simmer Chicken: Return chicken to pan, cover, and simmer for 25-30 minutes.
  7. Prepare Yogurt Drizzle: Whisk yogurt with salt and lemon juice.
  8. Rest & Garnish: Rest chicken, then garnish with herbs, nuts, and arils.
  9. Plate & Serve: Arrange chicken and sauce, drizzle with yogurt.

Notes

For optimal flavor, use bone-in, skin-on chicken thighs. Letting the dish rest after simmering allows the flavors to meld.
