Description

This recipe features Maple-Gilded Leaf Wraps, a tender and flaky lembas bread updated with real maple syrup and a simple wrapping technique. Perfect for busy weeknights, school lunches, or a delightful family treat, it’s a quick and nourishing bake.

Ingredients

Scale
  • 2 cups all-purpose flour, (240g)
  • 2 teaspoons baking powder
  • 0.5 cup cold unsalted butter, (113g)
  • 0.5 cup pure maple syrup, (120ml) plus more for glaze
  • 0.75 cup milk, (180ml, dairy or plant-based)
  • 0.5 teaspoon salt
  • 0.5 teaspoon cinnamon or nutmeg, (optional)

Instructions

  1. Prep the Dough: In a large mixing bowl, whisk together the 2 cups (240g) all-purpose flour, 2 teaspoons baking powder, and 0.5 teaspoon salt until well combined. Using a pastry blender or your fingertips, cut in the 0.5 cup (113g) very cold unsalted butter until the mixture resembles coarse crumbs, with some pea-sized pieces visible. Gradually stir in the 0.75 cup (180ml) milk and 2 tablespoons of the maple syrup until a soft, shaggy dough forms. Don’t overmix the dough; a light hand keeps the Maple-Gilded Leaf Wraps tender. (If your dough looks too dry, splash in 1-2 tablespoons more milk.)
  2. Shape the Wraps: Lightly flour a clean work surface. Turn out the dough and gently knead it a few times to bring it together. Roll the dough to about 0.25-inch (0.6 cm) thickness. Using a leaf-shaped cookie cutter (or a knife for simple squares about 3×4 inches / 7.5×10 cm), cut out your wraps. Place the cutouts on a baking sheet lined with parchment paper, leaving a little space between each.
  3. Bake to Golden: Preheat your oven to 375°F (190°C). Bake the Maple-Gilded Leaf Wraps for 12-15 minutes, or until the edges are light golden brown and they feel firm to the touch. The aroma of baking maple will fill your kitchen.
  4. Maple Glaze: While the wraps are still warm from the oven, gently brush them generously with additional pure maple syrup. This creates a glossy, sweet finish that sinks into the warm bread. Serve immediately and enjoy the tender texture, or let them cool slightly.

Notes

Avoid overmixing the dough and ensure butter is very cold for tender, flaky wraps. If you don’t have leaf cutters, use a knife to cut squares or rectangles. Store in an airtight container at room temperature for up to 3 days.
