Instructions
- Preheat & Prepare: Preheat oven to 175°C (350°F) and grease/line a 9-inch cake pan.
- Combine Dry: Whisk flour, baking powder, baking soda, salt, and poppy seeds.
- Cream Butter & Sugar: Cream butter and sugar until light and fluffy.
- Add Eggs & Flavorings: Beat in eggs one at a time, then stir in lemon zest, juice, and vanilla.
- Alternate Wet & Dry: Gradually add dry ingredients alternating with milk, beginning and ending with dry.
- Create Swirl: Spread half the batter, dollop jam, swirl, top with remaining batter, repeat, and swirl.
- Bake: Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool & Glaze: Cool in pan for 10 minutes, then invert and cool completely. Whisk glaze ingredients and drizzle over cake.
- Garnish & Serve: Sprinkle with almond slivers and lemon zest.
