Instructions

  1. Prepare Crispy Shallots and Oil: Heat the neutral vegetable oil in a small saucepan over medium-low heat. Add the thinly sliced shallots and cook gently, stirring occasionally, for 8-12 minutes until they turn golden brown and crisp.
  2. Drain Shallots and Reserve Oil: Carefully remove the crispy shallots from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. Reserve the shallot-infused oil in the saucepan and let cool slightly.
  3. Mix Crema Base: In a medium mixing bowl, combine the full-fat sour cream, fresh lime juice, finely grated lime zest, ground turmeric, minced garlic, and sea salt. Whisk vigorously until all ingredients are thoroughly incorporated and the crema is smooth.
  4. Adjust Seasoning and Consistency: Taste the crema and adjust salt or add a small splash of additional lime juice if necessary. If the crema base is too thick, add a teaspoon of water or lime juice while whisking to thin slightly.
