Description

A vibrant golden turmeric lime crema featuring a rich sour cream base, bright lime juice, and earthy turmeric, finished with savory crispy shallots and infused oil.

Ingredients

Scale
  • 1 cup full-fat sour cream
  • 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated lime zest
  • 0.5 teaspoon ground turmeric
  • 1 clove garlic, minced
  • 0.5 teaspoon sea salt, or to taste
  • 2 medium shallots, thinly sliced
  • 0.5 cup neutral vegetable oil
  • 0.25 cup fresh cilantro, chopped

Instructions

  1. Prepare Crispy Shallots and Oil: Heat the neutral vegetable oil in a small saucepan over medium-low heat. Add the thinly sliced shallots and cook gently, stirring occasionally, for 8-12 minutes until they turn golden brown and crisp.
  2. Drain Shallots and Reserve Oil: Carefully remove the crispy shallots from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. Reserve the shallot-infused oil in the saucepan and let cool slightly.
  3. Mix Crema Base: In a medium mixing bowl, combine the full-fat sour cream, fresh lime juice, finely grated lime zest, ground turmeric, minced garlic, and sea salt. Whisk vigorously until all ingredients are thoroughly incorporated and the crema is smooth.
  4. Adjust Seasoning and Consistency: Taste the crema and adjust salt or add a small splash of additional lime juice if necessary. If the crema base is too thick, add a teaspoon of water or lime juice while whisking to thin slightly.
  5. Plate and Garnish: Spoon the turmeric lime crema into a serving bowl. Drizzle generously with 1-2 tablespoons of the reserved, cooled shallot-infused oil over the surface. Scatter the crispy fried shallots evenly over the crema.
  6. Finish Presentation: Sprinkle with finely chopped fresh cilantro before serving.

Notes

Use full-fat sour cream for the best texture; light sour cream or yogurt may be too watery. Allow the sour cream to sit at room temperature for 15-20 minutes before mixing to prevent clumping. Use freshly squeezed lime juice for a vibrant flavor. If you prefer a milder garlic flavor, briefly cook the minced garlic in the shallot oil before mixing. Store leftovers in an airtight container in the refrigerator for up to 3 days.
