- 12 small flour tortillas (4 in), pliable
- 200 g (7 oz) cream cheese, softened
- 100 g (3.5 oz) mascarpone cheese, softened
- 80 g (0.5 cup) granulated sugar
- 1 tsp (5 ml) vanilla extract, alcohol-free
- 2 tbsp (30 ml) heavy cream
- 100 g (3.5 oz) cream cheese, for glaze
- 30 g (0.25 cup) powdered sugar
- 2 tbsp (30 ml) fresh lime juice
- 1 tsp lime zest
- 120 g (0.5 cup) Fruity Pebbles cereal
- 30 g (2 tbsp) toasted coconut flakes
- Pinch of sea salt
Instructions
- Warm Tortillas: Gently warm tortillas to prevent cracking.
- Make Filling: Beat cream cheese, mascarpone, sugar, and vanilla until smooth. Add heavy cream and beat until fluffy.
- Fill & Assemble: Pipe filling onto tortillas and fold into taco shape.
- Chill Tacos: Refrigerate assembled tacos for 20-30 minutes to firm up.
- Make Glaze: Beat cream cheese, powdered sugar, lime juice, and zest until smooth.
- Glaze & Garnish: Drizzle glaze over chilled tacos and sprinkle with Fruity Pebbles and coconut.
- Serve: Serve immediately for best texture and flavor.
Notes
For a firmer seal, gently press the edges of the tacos together after folding. Preparing the filling and glaze ahead of time can save time on the day of serving.
