  • 150g (0.3lb) Fresh Pineapple Chunks, caramelized glaze
  • 40g (0.1lb) Coconut Sugar, rich caramel glaze

Instructions

  1. Preheat & Prepare: Preheat oven to 180°C (350°F), grease and line a 20cm (8-inch) cake pan.
  2. Combine Dry: Whisk flour, baking powder, and salt in a bowl.
  3. Cream Butter & Sugar: Cream butter and sugar until pale and fluffy.
  4. Add Eggs & Flavorings: Incorporate eggs one at a time, then vanilla, lime zest, and juice.
  5. Blend Wet Ingredients: Gently blend in pineapple puree and coconut milk.
  6. Combine Wet & Dry: Fold dry ingredients into wet until just combined.
