  • 2 Tbsp white or yellow miso paste
  • 3 Tbsp soy sauce or tamari
  • 2 Tbsp brown sugar or 3 Tbsp maple syrup
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 Tbsp rice vinegar
  • 2 Tbsp avocado or olive oil

Instructions

  1. Prep The Lions Mane: Gently clean mushrooms with a dry cloth. Slice or tear them into steak-like pieces, about 1-inch (2.5 cm) thick.
  2. Sear The Mushrooms: Heat 2 Tbsp oil in a large 10-inch skillet over medium-high heat until shimmering. Cook mushrooms in batches, without overcrowding, until golden brown and slightly crispy, about 4-5 minutes per side. (If your pan looks dry, splash in 1-2 Tbsp more oil, but avoid stewing.)
  3. Whip Up The Miso Caramel Glaze: In a small saucepan, combine miso, soy sauce, brown sugar, rice vinegar, garlic, and ginger. Simmer gently over medium-low heat until it thickens and coats a spoon, about 5-7 minutes.
  4. Glaze And Serve: Return all seared mushrooms to the skillet. Pour the Miso Caramel Glaze over them, tossing to coat evenly. Cook for 1-2 minutes until beautifully sticky and shimmering.

Notes

For gluten-free needs, use tamari instead of soy sauce and coconut sugar if preferred. Other firm mushrooms like oyster or king trumpet can be substituted for lions mane. For a spicy kick, add red pepper flakes to the glaze. Garnish with fresh chopped cilantro or thinly sliced green onions. Alternatively, oven roast mushrooms at 400°F (200°C) for 15-20 minutes before adding the glaze. To avoid watery mushrooms, ensure your pan is hot enough and avoid overcrowding. If the glaze is too thin, continue simmering gently until it reduces. Store leftovers in an airtight container in the refrigerator for up to 3 days.
