  • 2 cups (480 ml) full-fat sour cream
  • 8 oz (225 g) cream cheese, softened
  • 2 large red bell peppers (about 14 oz / 400 g total)
  • 2 cloves garlic
  • 1 tbsp (15 ml) olive oil
  • 1 tsp (5 ml) smoked paprika
  • 1 tsp (5 ml) apple cider vinegar
  • 1/2 tsp (2.5 ml) granulated sugar
  • 1/2 tsp (2 ml) salt
  • 1/4 tsp (1 ml) black pepper
  • 1 tbsp (15 ml) fresh chives, finely chopped, for garnish

Instructions

  1. Roast Vegetables: Preheat oven to 400°F (200°C). Cut the red peppers in half and remove seeds. Toss peppers and whole garlic cloves with olive oil. Roast on a baking sheet for 20-25 minutes, until tender and lightly charred.
  2. Prepare Red Pepper Swirl: Transfer roasted peppers and garlic to a heatproof bowl and cover tightly for 10 minutes to steam. Peel the skin from the peppers and discard. Combine peeled peppers, garlic, smoked paprika, apple cider vinegar, sugar, salt, and pepper in a food processor. Blend until completely smooth.
  3. Mix Onion Dip Base: In a separate bowl, combine the Lipton Onion Soup Mix, full-fat sour cream, and softened cream cheese. Beat with an electric mixer or whisk until the mixture is completely smooth and homogeneous.
  4. Create Swirl Pattern: Spoon about half of the onion dip base into a serving bowl. Dollop half of the red pepper mixture over the dip in several spots. Gently swirl the red pepper mixture into the onion base using a knife or skewer. Repeat with the remaining layers.
  5. Chill and Serve: Cover the dip and refrigerate for at least 2 hours to allow flavors to meld and the dip to firm up. Garnish with fresh chives right before serving.

Notes

For best results, prepare this dip at least 2 hours ahead to allow flavors to develop fully; chilling overnight yields an even better taste. Full-fat dairy is recommended for the best texture and structure. To add heat, include a roasted jalapeño or a pinch of cayenne pepper in the red pepper mixture before blending.
