Instructions
- Sauté Vegetables: Sauté onion, carrot, and celery in olive oil until softened (5-6 minutes).
- Bloom Garlic: Add garlic and cook until fragrant (1 minute).
- Brown Beef: Brown ground beef, breaking it up with a spoon (4-5 minutes).
- Add Spices: Stir in tomato paste, smoked paprika, cumin, and mustard powder; cook for 2 minutes.
- Simmer Soup: Add diced tomatoes, broth, and water; bring to a simmer.
- Cook Macaroni: Add macaroni and cook until al dente (10-12 minutes).
- Season Soup: Season with salt and pepper to taste.
- Make Swirl: Combine cheddar, cream cheese, chipotle, and broth; whisk until smooth.
- Serve & Swirl: Ladle soup and drizzle with chipotle cheddar swirl.
