- 0.5 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1.5 cups chopped walnuts
- Pinch of salt
Instructions
- Prepare Pan: Line an 8×8-inch (20x20cm) baking pan with parchment paper, leaving an overhang on the sides for easy lifting. Butter the paper lightly to ensure no sticking.
- Combine and Cook: In a heavy-bottom saucepan, combine sugar, butter, milk, and maple syrup. Stir over medium heat until the sugar fully dissolves (about 5 minutes) and the mixture looks clear. Bring to a boil without stirring, then insert a candy thermometer. Continue boiling until the mixture reaches 238°F (114°C), the soft ball stage, which should take 10-15 minutes.
- Cool Mixture: Remove the saucepan from heat. Let the mixture cool undisturbed for about 5-10 minutes, or until the temperature drops to around 110°F (43°C). Do not stir while cooling, as this can cause crystallization.
- Beat and Add Walnuts: Add vanilla extract and begin beating with a wooden spoon or electric mixer on medium speed. Beat vigorously until the fudge thickens, loses its glossy sheen, and becomes opaque and creamy, usually about 5-7 minutes. Stir in the chopped walnuts.
- Set and Slice: Quickly pour the warm fudge into the prepared pan, spreading evenly with a spatula. Let it cool completely at room temperature until firm, about 2-3 hours, or chill in the fridge for faster setting (about 1 hour). Once firm, lift the fudge out using the parchment paper and cut into 1-inch (2.5cm) squares with a warm, sharp knife.
Notes
For best results, use pure maple syrup (Grade A dark amber for deeper notes) and fresh walnuts. Evaporated milk can be used for extra creaminess. To prevent graininess, ensure sugar dissolves fully before boiling and avoid stirring while boiling and cooling.
