Ingredients
- 2.5 lbs butternut squash, peeled, deseeded, cubed
- 0.5 cup (113g) unsalted butter
- 12–15 fresh sage leaves
- 0.25 cup (60ml) whole milk or heavy cream
- 0.5 teaspoon (3g) salt, or to taste
- 0.25 teaspoon (1g) freshly ground black pepper, or to taste
Instructions
- Prep the Squash: Halve and deseed butternut squash. Roast cut-side down on a sheet pan with water, or steam until fork-tender (25-35 minutes). Flesh should be very soft.
- Mash It Up: Scoop flesh into a bowl. Mash until smooth with milk or cream, salt, and pepper. It should be creamy (add 1-2 Tbsp milk if too thick). Do not over-mash.
- The Brown Butter Sage Swirl: Melt butter in a small pan over medium heat. Cook until nutty, golden, and fragrant (3-4 minutes). Add fresh sage and cook for 30 seconds until vibrant and aromatic.
- Combine & Serve: Spoon mashed butternut squash into a dish. Swirl the aromatic brown butter sage mixture through and serve immediately.
Notes
For ultimate convenience, use pre-cut frozen butternut squash. To soften quickly, microwave whole squash for 10-15 minutes before cutting. Be careful not to over-mash the squash as it can get gluey; stop when smooth. Ensure sage doesn’t get crispy if you prefer it tender.
