  • 0.25 cup soy sauce or tamari (about 60ml)
  • 2 Tbsp mirin (about 30ml)
  • 23 stalks scallions, thinly sliced (for garnish)

Instructions

  1. Prep Your Layers: Wash napa cabbage and cut into 2-inch sections. Slice chicken into similar widths. Thinly slice other vegetables.
  2. Assemble the Pot: In a sturdy 10-inch pot, arrange cabbage and chicken slices alternately and tightly in a circular pattern, filling gaps with mushrooms or carrots to create a dense spiral.
  3. Add the Broth: Gently pour savory broth over ingredients until 3/4 up layers, ensuring the top is slightly exposed. Add more if needed until 3/4 submerged.
  4. Simmer to Perfection: Cover and cook over medium heat for 20-25 minutes, until cabbage is tender and chicken is cooked through.

Notes

For deeper umami, use rehydrated dried shiitake mushrooms. When assembling, do not overcrowd the pot for even cooking. Avoid overcooking the napa cabbage; it should be tender but not mushy.
