This recipe delivers flavorful grilled chicken thighs with a delicious miso ginger glaze. It’s perfect for a weeknight dinner or barbecue, offering a balance of savory, sweet, and zesty flavors.

- 4 (≈800g / 1¾ lb) bone-in, skin-on chicken thighs
- 3 Tbsp (45 mL) light soy sauce
- 2 Tbsp (30g) white miso paste
- 2 Tbsp (30 mL) + 1 tsp (5 mL) honey
- 2 Tbsp (30 mL) + 1 tsp (5 mL) fresh lime juice
- 1 Tbsp (15 mL) + 2 Tbsp (30 mL) sesame oil
- 2 tsp (10g) freshly grated ginger
- 2 cloves minced garlic
- 1 tsp (5g) ground black pepper
- 1 tsp (5g) smoked paprika (optional)
- 2 Tbsp (30 mL) neutral oil for grilling
- 1 tsp (5g) toasted sesame seeds + extra for garnish
- 1 tsp (5 mL) lime zest
- pinch salt
- 2 scallions, thinly sliced, for garnish
- handful microgreens (optional garnish)
Instructions
- Prepare Grill: Preheat grill to medium-high heat and oil the grates.
- Marinate Chicken: Coat chicken in miso ginger glaze for 30-120 minutes.
- Grill Skin-Side Down: Grill chicken skin-side down for 6-7 minutes.
- Flip & Glaze: Flip chicken and brush with remaining glaze.
- Final Grill & Check Temp: Grill for 5-6 minutes, brushing with glaze. Ensure internal temp reaches 75°C (165°F).
- Rest & Slice: Rest chicken for 5 minutes before slicing.
- Drizzle & Garnish: Drizzle with sesame sauce and garnish with sesame seeds and scallions.
Notes
Pat chicken skin dry before marinating for extra crispy skin. Don’t move the chicken during the initial skin-side down grilling to promote searing.
