Description

Ingredients

  • 4 (≈800g / 1¾ lb) bone-in, skin-on chicken thighs
  • 3 Tbsp (45 mL) light soy sauce
  • 2 Tbsp (30g) white miso paste
  • 2 Tbsp (30 mL) + 1 tsp (5 mL) honey
  • 2 Tbsp (30 mL) + 1 tsp (5 mL) fresh lime juice
  • 1 Tbsp (15 mL) + 2 Tbsp (30 mL) sesame oil
  • 2 tsp (10g) freshly grated ginger
  • 2 cloves minced garlic
  • 1 tsp (5g) ground black pepper
  • 1 tsp (5g) smoked paprika (optional)
  • 2 Tbsp (30 mL) neutral oil for grilling
  • 1 tsp (5g) toasted sesame seeds + extra for garnish
  • 1 tsp (5 mL) lime zest
  • pinch salt
  • 2 scallions, thinly sliced, for garnish
  • handful microgreens (optional garnish)

Instructions

  1. Prepare Grill: Preheat grill to medium-high heat and oil the grates.
  2. Marinate Chicken: Coat chicken in miso ginger glaze for 30-120 minutes.
  3. Grill Skin-Side Down: Grill chicken skin-side down for 6-7 minutes.
  4. Flip & Glaze: Flip chicken and brush with remaining glaze.
  5. Final Grill & Check Temp: Grill for 5-6 minutes, brushing with glaze. Ensure internal temp reaches 75°C (165°F).
  6. Rest & Slice: Rest chicken for 5 minutes before slicing.
  7. Drizzle & Garnish: Drizzle with sesame sauce and garnish with sesame seeds and scallions.

Notes

Pat chicken skin dry before marinating for extra crispy skin. Don’t move the chicken during the initial skin-side down grilling to promote searing.
