  • 2 tbsp (30 ml) low-sodium soy sauce
  • 200 ml (⅞ cup) vegetable broth
  • 1 tsp (5 ml) lime juice
  • 1 tsp (5 g) cornstarch mixed with 1 tbsp (15 ml) water
  • Salt and pepper to taste
  • 1 tbsp (15 g) toasted cocoa nibs
  • 1 tbsp (15 g) pomegranate seeds
  • 2 tbsp (8 g) chopped cilantro
  • 1 tsp (5 ml) pomegranate molasses

Instructions

  1. Prepare Chicken: Season chicken thighs with salt, pepper, and paprika.
  2. Sear Chicken: Sear chicken in oil until browned on all sides.
  3. Sauté Aromatics: Sauté onion and garlic until softened.
  4. Bloom Spices: Toast paprika, cumin, coriander, and cocoa powder.
  5. Deglaze Pan: Add espresso and scrape up browned bits.
  6. Build Sauce: Add maple syrup, soy sauce, and broth; simmer.
  7. Simmer Chicken: Return chicken to skillet and simmer until cooked through.
  8. Thicken Sauce: Thicken sauce with cornstarch slurry.
