Ingredients
- 2.25 tsp (7g) active dry yeast
- 0.5 cup (120ml) warm milk (105–115 degrees F / 40–46 degrees C)
- 0.25 cup (50g) granulated sugar
- 1 large egg
- 0.25 cup (56g) unsalted butter, melted
- 2.5 to 3 cups (300-360g) all-purpose flour (use unbleached for best texture)
- 0.5 tsp salt
- 1 cup (226g) unsalted butter, melted
- 1.5 cups (300g) granulated sugar
- 3 cups (360g) all-purpose flour
- 1.5 tsp ground cinnamon
Instructions
- Prepare Crumb Topping: Combine melted butter, sugars, flour, and cinnamon. Mix until crumbs form (approx. 5 minutes active prep) and then chill.
- Mix Bun Dough: Dissolve yeast in warm milk (105-115 degrees F / 40-46 degrees C) until foamy (5 min). Add wet ingredients, then flour (approx. 10 min active), and knead until smooth.
- First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot until doubled (approx. 1-1.5 hours).
- Assemble and Second Rise: Gently press dough into a 9×13 inch dish. Scatter the chilled crumb topping (approx. 15 minutes active), cover, and let rise until puffy (30-45 minutes).
- Bake the Buns: Preheat oven to 350 degrees F (175 degrees C). Bake for 25-35 minutes until buns are golden and crumb topping deeply browned.
- Cool Completely: Remove from oven and let the New Jersey crumb buns cool fully on a wire rack to allow the crumb to set.
Notes
For a lighter bun, consider using a portion of whole wheat pastry flour or slightly reducing the sugar in the bun. Always use fresh milk and eggs for optimal dough rise and the best overall flavor. A stand mixer with a dough hook simplifies kneading. For special diets, remember to substitute plant-based milk and vegan butter for dairy-free, and flax eggs for egg-free options in the bun recipe. Cooling completely on a wire rack allows the crumb to set.
