- Make Biscuit Dough: In a separate medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in the very cold butter using a pastry blender or your fingertips until mixture resembles coarse crumbs with pea-sized pieces. Gradually add cold milk, mixing until just combined and a soft dough forms (add 1-2 Tbsp more milk if dough is too dry). Do not overmix.
- Assemble Cobbler: Dollop spoonfuls of biscuit dough over the apple mixture, leaving small gaps for steam to escape. Gently brush with the optional egg wash for a golden top.
