  • 4 cups low sodium beef broth
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • Salt and black pepper, to taste
  • 0.25 cup fresh emerald parsley, chopped, for garnish
  • 1 Tbsp flour or cornstarch (optional, for thicker stew)

Instructions

  1. Brown the Beef: Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Add beef chuck in a single layer and brown on all sides until well-sealed and deeply colored. Transfer browned beef to a bowl.
  2. Sauté Aromatics: Add the remaining 1 tablespoon of olive oil to the same pot. Add chopped yellow onions and diced bell peppers. Sauté, stirring occasionally, until softened and translucent.
  3. Add Garlic and Paprika: Stir in the minced garlic and 3 tablespoons of sweet Hungarian paprika. Cook for just 1 minute, stirring constantly, until fragrant.
  4. Build the Stew Base: Pour in 0.5 cup of the beef broth, scraping the bottom of the pot to deglaze. Stir in the tomato paste and canned diced tomatoes with their juices.
  5. Simmer the Goulash: Return the browned beef to the pot. Add the remaining 3.5 cups of beef broth, ensuring the meat is mostly submerged. Bring to a gentle simmer, then reduce heat to low, cover, and cook until the beef is fork-tender and the sauce has slightly thickened (about 45-60 minutes).
