  • 2 Tbsp (30ml) Olive Oil
  • 150g (5oz) Onion, diced
  • 3 Cloves Garlic, minced
  • 1 Tbsp (15ml) Harissa Paste
  • 200g (1 cup) Orzo Pasta
  • 240ml (1 cup) Low-Sodium Vegetable Broth
  • 240ml (1 cup) Diced Tomatoes, drained
  • 120ml (½ cup) Heavy Cream
  • 1 Tbsp (15ml) Sun-Dried Tomato Paste
  • 1 tsp (5ml) Smoked Paprika
  • ½ tsp (2.5ml) Ground Cumin
  • ½ tsp (2.5ml) Dried Oregano
  • ¼ tsp (1.25ml) Red Pepper Flakes, optional
  • Salt and Pepper to taste
  • 2 Tbsp (30ml) Parsley, chopped
  • 1 tsp (5ml) Lemon Zest
  • 1 tsp (5ml) Pomegranate Molasses

Instructions

  1. Sear Chicken: Season chicken thighs and sear in olive oil until golden brown.
  2. Sauté Aromatics: Sauté onion, garlic, and harissa paste in the same pan.
  3. Toast Orzo: Add orzo and toast for 1 minute.
  4. Simmer with Sauce: Add broth, tomatoes, and sun-dried tomato paste; simmer.
  5. Combine and Cook: Nestle chicken into the orzo mixture and simmer until orzo is al dente and chicken is cooked through.
  6. Rest and Garnish: Rest for 5 minutes, then garnish with parsley, lemon zest, and pomegranate molasses.

Notes

For a richer flavor, use cast iron. Toasting the orzo prevents it from becoming mushy.
