- 2 Tbsp (30ml) Olive Oil
- 150g (5oz) Onion, diced
- 3 Cloves Garlic, minced
- 1 Tbsp (15ml) Harissa Paste
- 200g (1 cup) Orzo Pasta
- 240ml (1 cup) Low-Sodium Vegetable Broth
- 240ml (1 cup) Diced Tomatoes, drained
- 120ml (½ cup) Heavy Cream
- 1 Tbsp (15ml) Sun-Dried Tomato Paste
- 1 tsp (5ml) Smoked Paprika
- ½ tsp (2.5ml) Ground Cumin
- ½ tsp (2.5ml) Dried Oregano
- ¼ tsp (1.25ml) Red Pepper Flakes, optional
- Salt and Pepper to taste
- 2 Tbsp (30ml) Parsley, chopped
- 1 tsp (5ml) Lemon Zest
- 1 tsp (5ml) Pomegranate Molasses
Instructions
- Sear Chicken: Season chicken thighs and sear in olive oil until golden brown.
- Sauté Aromatics: Sauté onion, garlic, and harissa paste in the same pan.
- Toast Orzo: Add orzo and toast for 1 minute.
- Simmer with Sauce: Add broth, tomatoes, and sun-dried tomato paste; simmer.
- Combine and Cook: Nestle chicken into the orzo mixture and simmer until orzo is al dente and chicken is cooked through.
- Rest and Garnish: Rest for 5 minutes, then garnish with parsley, lemon zest, and pomegranate molasses.
Notes
For a richer flavor, use cast iron. Toasting the orzo prevents it from becoming mushy.
