Description

This One-Pot Creamy Cajun Sausage Pasta is a flavorful and easy weeknight meal. It combines spicy sausage, roasted red pepper, and a creamy sauce for a satisfying dish.


Ingredients

  • 250g (9oz) penne pasta
  • 250g (9oz) spicy chicken sausage, sliced
  • 1 Tbsp (15ml) olive oil
  • 80g (3oz) onion, diced
  • 2 cloves garlic, minced
  • 100g (3.5oz) roasted red pepper puree
  • 1 tsp (5g) smoked paprika
  • 2 tsp (6g) Cajun seasoning
  • 200ml (0.75cup) heavy cream
  • 100ml (0.5cup) low-sodium chicken broth
  • 50g (0.5cup) grated Parmesan cheese
  • Salt and pepper to taste
  • 2 Tbsp (30ml) water (if needed)
  • 2 Tbsp (30g) toasted breadcrumbs with garlic powder & parsley

Instructions

  1. Cook Pasta: Boil pasta for 2 minutes less than package directions, reserve 120ml (0.5cup) pasta water, then drain.
  2. Sauté Sausage: Brown sausage in olive oil for 3-4 minutes.
  3. Build Aromatics: Sauté onion until translucent (2 minutes), then add garlic and cook until fragrant (1 minute).
  4. Bloom Spices: Stir in Cajun seasoning and paprika with reserved pasta water for 30 seconds.
  5. Create Sauce: Simmer broth and cream, then stir in Parmesan until thickened.
  6. Swirl Pepper: Gently swirl in roasted red pepper puree.
  7. Combine & Finish: Toss pasta with sauce, season, and let sit for 2 minutes.
  8. Serve & Garnish: Plate, drizzle with pepper swirl, and top with breadcrumbs.

Notes

For a richer sauce, use the reserved pasta water to adjust consistency. Toasting breadcrumbs enhances their flavor and texture.
