- 200g Yellow Onions, thinly sliced (2 large)
- 2 Cloves Garlic, minced
- 15ml Olive Oil (1 tbsp)
- 15g Unsalted Butter (1 tbsp)
- 150g Long-Grain White Rice, rinsed (¾ cup)
- 500ml Low-Sodium Vegetable Broth (2 cups)
- 10ml Apple Cider Vinegar (⅔ tbsp)
- 3g Dried Thyme (¾ tsp)
- 1 Bay Leaf
- Salt and Pepper, to taste
- 40g Grated Parmesan Cheese (microbial-rennet) (¼ cup)
- 20g Panko Breadcrumbs (⅛ cup)
- 3g Chopped Fresh Parsley (1 tbsp)
- Pinch of Smoked Paprika (optional)
Instructions
- Sear Chicken: Season chicken thighs and sear for 3-4 minutes per side.
- Caramelize Onions: Slowly cook sliced onions in oil and butter for 15-18 minutes until golden brown.
- Infuse Aromatics: Stir in garlic and thyme; sauté for 1 minute.
- Toast Rice: Add rinsed rice and toast for 2 minutes, coating in the butter-oil mixture.
- Deglaze & Simmer: Deglaze with vinegar, add broth and bay leaf; bring to a boil.
- Simmer to Perfection: Cover and simmer for 15 minutes, or until rice is tender.
- Prepare Crumble: Combine Parmesan, panko, parsley, butter, and paprika.
- Broil & Finish: Sprinkle crumble over rice; broil for 2-3 minutes until golden.
- Serve: Remove bay leaf, fluff rice, and garnish with parsley.
