  • 1 Bay Leaf
  • Salt and Pepper, to taste
  • 40g Grated Parmesan Cheese (microbial-rennet) (¼ cup)
  • 20g Panko Breadcrumbs (⅛ cup)
  • 3g Chopped Fresh Parsley (1 tbsp)
  • Pinch of Smoked Paprika (optional)

Instructions

  1. Sear Chicken: Season chicken thighs and sear for 3-4 minutes per side.
  2. Caramelize Onions: Slowly cook sliced onions in oil and butter for 15-18 minutes until golden brown.
  3. Infuse Aromatics: Stir in garlic and thyme; sauté for 1 minute.
  4. Toast Rice: Add rinsed rice and toast for 2 minutes, coating in the butter-oil mixture.
  5. Deglaze & Simmer: Deglaze with vinegar, add broth and bay leaf; bring to a boil.
