  • 1 tablespoon fresh mint, chopped

Instructions

  1. Prep Onions and Dry Batter: Peel and slice large sweet onions into 1 cm rings. Gently separate rings. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, Za’atar, garlic powder, onion powder, and sea salt.
  2. Create Wet Batter: Gradually add the 0.75 cup cold water or plant-based milk to the dry ingredients, whisking continuously until a smooth batter forms. Allow the batter to rest for 5-10 minutes.
  3. Preheat Air Fryer and Coat Rings: Preheat air fryer to 195°C (385°F) for at least 5 minutes. Dip each onion ring fully into the Za’atar spiced batter, allowing excess batter to drip off. Arrange coated rings in a single layer in the preheated air fryer basket.
  4. Air Fry Onion Rings: Lightly spray the battered rings with vegetable oil spray. Air fry for 8-10 minutes, flipping halfway through and spraying lightly again on the other side. Cook until golden brown and visibly crispy.
  5. Make Lemon-Herb Yogurt Dip: While rings cook, prepare the dipping sauce in a small bowl. Combine the yogurt, fresh lemon juice, minced garlic, chopped parsley, and chopped mint. Stir well and season to taste with salt and pepper.
  6. Serve Immediately: Transfer the crispy onion rings to a platter and serve immediately while hot, alongside the Lemon-Herb Yogurt Dip.

Notes

Chill separated onion rings for 15 minutes before battering for best texture. Ensure liquid for the batter is very cold and avoid overmixing to keep the coating light. Air fry in batches, ensuring no overlapping rings, for maximum crispness.
