Description
This Orange Cardamom Fig Jam combines the sweetness of ripe figs with bright orange and warm cardamom spice, topped with toasted almonds and a honey swirl. It’s a comforting and flavorful spread perfect for gifting or enjoying a cozy moment.

- 1 kg (2.2 lb) fresh figs, quartered
- 800 g (4 cups) granulated sugar
- 120 ml (½ cup) water
- 60 ml (¼ cup) lemon juice
- Zest of 1 orange
- 30 ml (2 Tbsp) orange juice
- 1 tsp ground cardamom
- 1 tsp alcohol-free vanilla extract
- 2 Tbsp honey, for swirl
- 50 g (½ cup) toasted sliced almonds, coarsely chopped
Instructions
- Prepare Figs: Quarter 1 kg figs and set aside.
- Macerate Mixture: Combine figs, 800g sugar, 120ml water, and 60ml lemon juice; let sit for 10 minutes.
- Boil & Simmer: Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
- Add Flavorings: Stir in orange zest, 30ml orange juice, 1 tsp cardamom, and 1 tsp vanilla.
- Simmer to Set: Continue simmering for 20-30 minutes, until jam reaches setting point.
- Jar Jam: Ladle hot jam into sterilized jars, leaving ½ inch headspace.
- Swirl & Garnish: Drizzle 2 tbsp honey and sprinkle 50g almonds over each jar.
- Seal & Cool: Seal jars, invert for 5 minutes, then cool upright.
Notes
Sterilize jars properly for long-term preservation. The ‘wrinkle test’ confirms the jam has reached the correct consistency.
