- 500 g beef sirloin steak, 1 inch thick
- 15 ml vegetable oil
- 5 g kosher salt
- 5 g black pepper, freshly cracked
- 5 g white pepper, ground
- 2 cloves garlic, minced
- 15 ml soy sauce (halal-certified)
- 15 ml white miso paste
- 5 ml chipotle paste (or 1 minced chipotle in adobo)
- 15 ml honey
- 5 ml rice vinegar
- 15 ml water
- 5 g sesame seeds, toasted
- 1 green onion, thinly sliced
Instructions
- Prepare Steak: Pat steak dry, season with salt, pepper, and white pepper. Rest for 10 minutes.
- Sear Steaks: Heat oil in a hot skillet. Sear steak for 2-3 minutes per side.
- Oven Roast: Roast at 200°C (400°F) for 6-8 minutes for medium-rare.
- Make Glaze: Combine garlic, soy sauce, miso, chipotle, honey, vinegar, and water in a saucepan.
- Simmer Glaze: Simmer glaze for 3-4 minutes, until thickened.
- Glaze & Caramelize: Brush steak with glaze and roast for 2 minutes.
- Rest & Slice: Rest steak for 3-4 minutes, then slice against the grain.
- Plate & Garnish: Arrange steak, drizzle with glaze, and garnish with sesame seeds and green onion.
Notes
For optimal searing, ensure the steak is completely dry and the skillet is very hot. Resting the steak after cooking allows the juices to redistribute, resulting in a more tender and flavorful result.
