- 2 cups (150g) thinly sliced purple cabbage
- 2 Tbsp (30ml) apple cider vinegar
- 1 Tbsp (15ml) olive oil
- 1 tsp (5g) sugar
- Salt, to taste
- Black pepper, to taste
Instructions
- Make Purple Slaw: Thinly slice 2 cups (150g) purple cabbage. Whisk 2 Tbsp (30ml) apple cider vinegar, 1 Tbsp (15ml) olive oil, 1 tsp (5g) sugar, salt, and pepper in a bowl. Pour over cabbage, toss until evenly coated and glistening. Let sit 5 minutes to soften slightly.
- Toast Rye Bread: Lightly butter one side of each bread slice. Toast in a 10-inch skillet over medium heat, or under a broiler, until golden brown and crisp to the touch.
- Assemble Sandwich: Spread mayonnaise on the untoasted bread sides. Layer pastrami generously on one slice, then top with Swiss cheese. Add a good amount of tangy purple slaw next.
- Create Mustard Stripe: Use a spoon or squeeze bottle to make parallel stripes of Dijon and yellow mustard on the other bread slice. (If pastrami seems dry when warmed, a splash of water helps it stay moist.)
- Finish And Serve: Place the mustard-striped bread on top. Press gently. Cut the hearty pastrami sandwich in half and serve immediately to enjoy the best textures and fresh flavors.
