- 1–2 tbsp Peach Puree (Glaze): Adds peach flavor and color to the glaze.
- 1 tsp Non-Alcoholic Sparkling Water (Glaze): Thins the glaze to the perfect consistency.
- Pinch of Orange Zest (Garnish): Adds color and aroma.
- Thin Slice of Fresh Peach (Optional Garnish): A flavorful finishing touch.
Instructions
- Preheat & Prep: Preheat oven to 180°C (350°F) and line a muffin tin with liners.
- Cream Butter & Sugar: Cream butter and sugar for 3 minutes until light and fluffy.
- Incorporate Eggs: Add eggs one at a time, beating well after each.
- Combine Wet Ingredients: Stir in yogurt, peach puree, sparkling water, vanilla, and lemon zest.
- Combine Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt.
- Combine Wet & Dry: Gently fold dry ingredients into wet ingredients.
- Prepare Cream Cheese Swirl: Beat cream cheese, powdered sugar, peach puree, lemon juice, and orange zest until smooth.
- Fill & Swirl: Fill liners ⅓ full, add swirl, then top with more batter; swirl gently.
- Bake to Perfection: Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cooling Process: Cool in tin for 10 minutes, then transfer to a wire rack.
- Glaze Preparation: Whisk powdered sugar, peach puree, and sparkling water for the glaze.
- Glaze & Garnish: Drizzle glaze and garnish with orange zest or peach slice.
Notes
For a more distinct swirl, use a slightly looser cream cheese mixture and avoid over-swirling. Using ripe peaches will significantly enhance the flavor.
