Instructions
- Prep Peaches: Peel, pit, and slice your peaches into uniform pieces, about 0.5-inch thick.
- Combine Ingredients: In a medium saucepan, gently mix the sliced peaches with sugar, cornstarch (or your chosen thickener), and lemon juice. Stir until the thickener is evenly distributed and no lumps are visible.
- Cook Filling: Heat the mixture over medium heat, stirring occasionally, until it comes to a gentle simmer. Cook for 10-15 minutes until it thickens and coats the back of a spoon with a glossy, syrupy texture. During the last few minutes, add the scraped vanilla bean seeds and the empty pod, letting it infuse.
- Cool and Store: Remove the saucepan from the heat immediately. Discard the vanilla bean pod. Let the filling cool completely to room temperature before using or storing.

Use in-season summer peaches for optimal taste. Frozen peaches (thawed and drained) are a great off-season alternative. Avoid overcooking to prevent mushy peaches. Ensure thickener is fully dissolved to prevent lumps. Cool completely before use for best texture and set.
