Description
A creamy and vibrant peanut sauce for spring rolls, featuring a unique spicy mango-lime swirl for a balanced sweet and savory flavor.
Ingredients
Scale
- 0.75 cup creamy peanut butter, natural, unsweetened
- 0.25 cup tamari or soy sauce, alcohol-free
- 0.25 cup warm water, plus more as needed
- 3 tablespoons fresh lime juice, total
- 2 tablespoons plain rice vinegar
- 1 tablespoon pure maple syrup, plus 1 teaspoon for swirl
- 1 clove fresh garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon chili garlic sauce
- 0.5 cup fresh mango, peeled and diced
- 0.5 teaspoon red pepper flakes
- 1 tablespoon fresh cilantro, chopped for swirl
Instructions
- Create the Peanut Sauce Base: In a medium mixing bowl, combine the peanut butter, tamari, warm water, 2 tablespoons fresh lime juice, rice vinegar, 1 tablespoon maple syrup, minced garlic, grated ginger, and chili garlic sauce. Whisk vigorously for 1-2 minutes until completely smooth. Add additional warm water one tablespoon at a time if a thinner consistency is desired.
- Prepare the Spicy Mango-Lime Swirl: In a small food processor or blender, combine the diced fresh mango, 1 tablespoon fresh lime juice, 1 teaspoon maple syrup, red pepper flakes, and 1 tablespoon chopped cilantro. Process until the mixture is completely smooth and forms a vibrant, pourable sauce.
- Assemble and Present the Swirled Sauce: Pour the prepared peanut sauce base into a wide, shallow serving bowl. Carefully drizzle the Spicy Mango-Lime Swirl over the peanut sauce in a circular pattern. Gently use a skewer or small spoon to lightly swirl the mango sauce into the peanut sauce, being careful not to overmix.
- Garnish and Serve: Serve the swirled sauce immediately in a light-colored bowl. Garnish the center with fresh cilantro sprigs and a couple of thin slices of red chili for visual appeal and an extra touch of heat.
Notes
For best flavor, use fresh lime juice and natural unsweetened peanut butter. Adjust spice level (chili garlic sauce and red pepper flakes) to taste. If serving to cilantro haters, omit the cilantro from the swirl and garnish with scallions. To thin the sauce, add warm water one tablespoon at a time.
