  • 0.5 cup chicken or vegetable broth (water can be used if broth isn’t available)
  • 2 tbsp fresh chives, chopped
  • Salt, to taste

Instructions

  1. Melt Butter: In a medium saucepan over medium heat, melt 2 tablespoons of butter until shimmering and completely liquid.
  2. Whisk in Flour: Add 2 tablespoons of all-purpose flour and whisk constantly to create a smooth, pale roux. Cook for 1-2 minutes until it smells lightly toasted and turns a light golden color.
  3. Gradually Add Liquids: Slowly whisk in 2 cups of whole milk and 0.5 cup of broth. Continue whisking until the mixture is smooth and lump-free. Bring to a gentle simmer, stirring frequently, until the gravy visibly thickens to your desired consistency (about 5-7 minutes). If it looks lumpy, whisk vigorously off the heat or use an immersion blender to smooth it out. If too thick, whisk in a splash more milk or broth until desired consistency.
  4. Season and Finish: Remove from heat. Stir in 1-2 teaspoons of freshly ground black pepper and salt to taste. Fold in 2 tablespoons of fresh chopped chives.

Notes

For the most potent aroma and flavor, always use freshly ground black pepper. Fresh chives add bright color and a delicate oniony kick that dried chives simply can’t replicate. If lumps occur, whisk vigorously off the heat or use an immersion blender to smooth it out. If too thick, whisk in a splash more milk or broth until desired consistency.
