  • 150g (5oz) Red Bell Pepper: thinly sliced
  • 15ml (1 Tbsp) Vegetable Oil: for sautéing
  • 5g (1 tsp) Smoked Paprika: for steak seasoning
  • 2.5g (½ tsp) Chipotle Powder: for steak seasoning
  • 100g (3.5oz) Sharp Cheddar Cheese: grated
  • 50g (1.75oz) Mozzarella Cheese: grated
  • 120ml (½ cup) Whole Milk: for cheese sauce
  • 15g (1 Tbsp) Unsalted Butter: for cheese sauce
  • 15g (1 Tbsp) All-Purpose Flour: for cheese sauce
  • 2.5g (½ tsp) Chipotle Powder: for cheese sauce
  • 0.5g (¼ tsp) Smoked Paprika: for cheese sauce
  • Pinch of Cayenne Pepper: optional
  • 30ml (2 Tbsp) Fresh Cilantro: chopped
  • Zest of ½ Lime
  • 15g (1 Tbsp) Toasted Corn Kernels: optional

Instructions

  1. Prep Fries: Toss fries with oil, salt, and pepper; bake at 220°C (425°F) for 25-30 minutes, flipping halfway.
  2. Sauté Veggies: Sauté onions and peppers in vegetable oil until softened.
  3. Cook Steak: Season beef with paprika, chipotle, salt, and pepper; cook with veggies until browned.
  4. Make Cheese Sauce: Melt butter, whisk in flour, then milk; simmer until thickened.
  5. Infuse Flavor: Stir in cheeses, chipotle powder, paprika, and cayenne (optional).
