- 2 medium (300g) red onions
- 1 cup (240 ml) white vinegar
- 1 cup (240 ml) water
- 1 Tbsp (15g) granulated sugar
- 1 tsp (5g) kosher salt
Instructions
- Prepare Onions: Thinly slice your red onions using a mandoline or a very sharp knife for uniform, quick-pickling slices. Pack them into a clean, heat-proof 16-ounce glass jar.
- Make Brine: In a small saucepan, combine 1 cup (240ml) white vinegar, 1 cup (240ml) water, 1 Tbsp (15g) granulated sugar, and 1 tsp (5g) kosher salt. Bring to a boil over medium heat, stirring until sugar and salt are completely dissolved (about 2-3 minutes). Remove from heat immediately.
- Combine And Cool: Carefully pour the hot brine over the packed onions, ensuring they are fully submerged. Let cool to room temperature (about 30 minutes), then cover tightly and refrigerate.
