Instructions

  1. Prepare Onions: Thinly slice your red onions using a mandoline or a very sharp knife for uniform, quick-pickling slices. Pack them into a clean, heat-proof 16-ounce glass jar.
  2. Make Brine: In a small saucepan, combine 1 cup (240ml) white vinegar, 1 cup (240ml) water, 1 Tbsp (15g) granulated sugar, and 1 tsp (5g) kosher salt. Bring to a boil over medium heat, stirring until sugar and salt are completely dissolved (about 2-3 minutes). Remove from heat immediately.
  3. Combine And Cool: Carefully pour the hot brine over the packed onions, ensuring they are fully submerged. Let cool to room temperature (about 30 minutes), then cover tightly and refrigerate.

Notes

Keep a batch of these pickled onions in your fridge every week. For variations, consider using apple cider vinegar, or swapping sugar for honey, maple syrup, or a sugar substitute. You can also add 5-6 whole peppercorns, 0.5 tsp mustard seeds, 0.25 tsp red pepper flakes, or a bay leaf to the jar. For spicy onions, add a few slices of jalapeño or a pinch of red pepper flakes. For herb-infused onions, tuck in fresh dill sprigs or thyme. Ensure onions are very fresh for the best crunch; avoid boiling them directly in the brine.
