Instructions
- Prepare Ingredients: Ensure cream cheese is softened and whipped topping is thawed. Drain crushed pineapple very well by pressing out excess liquid (e.g., in a fine-mesh sieve for 5 minutes).
- Beat Cream Cheese: In a large mixing bowl, beat softened cream cheese until smooth and creamy (about 1-2 minutes).
- Combine Main Ingredients: Gently fold in thawed whipped topping until just combined. Add well-drained crushed pineapple and mini marshmallows. Fold carefully until evenly distributed and fluffy.
- Add Coconut: Fold in about three-quarters of the toasted coconut.
- Chill Dessert: Transfer mixture to a 9×13 inch serving dish or individual bowls. Cover and refrigerate for at least 2 hours (or ideally overnight) to set and meld flavors.
- Garnish and Serve: Before serving, sprinkle remaining toasted coconut, optional pecans, or cherries over the top.
