- 200 g (7 oz) crushed tomatoes, plain
- 15 mL (1 tbsp) olive oil, plus extra
- 3 cloves garlic (2 minced, 1 grated)

- 2.5 mL (0.5 tsp) salt
- 1 mL (0.25 tsp) pepper
- 300 g (10.5 oz) boneless, skinless chicken thighs, thinly sliced (or plant-based strips for a healthy twist)
- Shawarma spice blend (cumin, coriander, smoked paprika, garlic powder, turmeric, cinnamon)
- 300 g (10.5 oz) fresh pineapple chunks, cored and well-drained
- 250 g (9 oz) low-moisture mozzarella, grated
- 60 g (4 tbsp) full-fat plain yogurt (Greek yogurt is a great substitute)
- 5 mL (1 tsp) lemon juice
- 15 g (0.5 oz) fresh mint, chopped
- 30 g (1 oz) toasted almonds
Instructions
- Preheat Oven & Prep Chicken: Preheat oven to 230 degrees C (450 degrees F) with a pizza stone for 30 minutes. Combine chicken, olive oil, and all shawarma spices; mix well.
- Cook Chicken: Heat a large skillet. Saute chicken for 4-6 minutes, stirring, until cooked through and lightly browned. Set aside.
- Prepare Sauces: Mix crushed tomatoes, minced garlic, oregano, salt, pepper for the pizza sauce. Whisk yogurt, grated garlic, lemon juice for the drizzle.
- Assemble Pizza Base: Roll dough (30-35 cm / 12-14 inch) on a floured surface. Transfer to a pizza peel or parchment. Spread tomato sauce, leaving a 1-2 cm border.
- Add Toppings: Sprinkle half of the mozzarella. Distribute cooked chicken and pineapple. Top with remaining mozzarella.
- Bake Pizza: Slide onto the hot stone. Bake for 12-18 minutes until the crust is golden and cheese is bubbly. (If edges brown fast, tent with foil.)
- Garnish & Serve: Toast almonds in a dry skillet for 2-3 minutes until fragrant. Remove pizza. Sprinkle mint and almonds. Drizzle yogurt sauce. Slice and serve hot.
