Ingredients
- 1 whole (about 3 cups) fresh pineapple, diced
- 0.5 cup (80 g) red onion, finely diced
- 1 medium jalapeño, finely diced
- 0.25 cup (10 g) fresh cilantro, chopped
- 2 tablespoons (30 ml) fresh lime juice
- 0.25 teaspoon (1.5 g) salt
Instructions
- Prep The Pineapple: Carefully cut and dice one whole pineapple into small, uniform 0.25-inch pieces.
- Chop The Veggies: Finely dice the red onion and jalapeño. For less heat, remove seeds and membranes. Roughly chop fresh cilantro.
- Combine And Season: In a medium bowl, gently combine pineapple, red onion, jalapeño, and cilantro. Squeeze in fresh lime juice and add salt.
- Chill For Flavor: Cover the salsa and chill in the refrigerator for at least 30 minutes to deepen and harmonize the flavors.
Notes
To mellow potent onion, rinse it under cold water after dicing. For milder heat, remove jalapeño seeds and membranes, or use half a small bell pepper. For spicier salsa, leave some jalapeño seeds in or add a dash of chili powder. Frozen (thawed and drained) or canned (well-drained) pineapple can be used. Consider adding diced mango or red bell pepper for variations.
