Description

This Emerald Crumb Loaf is a comforting, vibrant pistachio bread recipe, simple to whip up, bursting with a delightful green hue and a moist, tender crumb that’s simply irresistible.

Ingredients

Scale
  • 1.5 cups all-purpose flour (180g)
  • 0.75 cup granulated sugar (150g)
  • 2 large eggs, room temperature preferred
  • 0.5 cup vegetable oil (120ml) or melted unsalted butter
  • 0.5 cup milk (120ml) (whole or almond milk)
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract (pure vanilla is best)
  • 1 cup shelled unsalted pistachios (120g), chopped

Instructions

  1. Prep Pan And Oven: Preheat your oven to 350(degree)F (175(degree)C). Grease and lightly flour a 9×5 inch loaf pan, ensuring a thin, even coating for easy release later.
  2. Whisk Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk about 30 seconds until well-combined and light and airy.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk the large eggs, vegetable oil, milk, and vanilla extract. Whisk about 1 minute until smooth and pale yellow.
  4. Gently Combine And Fold: Pour the wet ingredients into the dry, mixing gently with a spatula until just combined (about 30-45 seconds); do not overmix. If it appears too dry, add milk, 1 tablespoon at a time, until the batter just comes together. Then, fold in the chopped pistachios.
  5. Bake Until Golden: Pour batter into the prepared loaf pan and bake for 50-60 minutes. It’s ready when the top is golden brown and a wooden skewer inserted into the center comes out clean.
  6. Cool Completely: Let the loaf cool in the pan for 10 minutes, which helps it set. Then, carefully transfer it to a wire rack to cool completely before slicing.

Notes

For a bright, citrusy lift, add 1 tablespoon of fresh lemon zest to the wet ingredients. For a healthier twist, reduce sugar by 0.25 cup or use unsweetened applesauce for half the oil. Spinach puree can enhance green color. Walnuts or pecans can substitute up to half of the pistachios. Use a stand mixer for beautiful mixing or a food processor for quick pistachio chopping.
