Description

This Poppy Seed Chicken Recipe Creamy Casserole is an easy, wholesome, and family-friendly weeknight dinner. It features shredded chicken in a creamy sauce with poppy seeds, topped with buttery Ritz crackers and baked until golden.

  • 2 cups cooked chicken breast, shredded or diced
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 Tbsp poppy seeds
  • 1 sleeve Ritz crackers, crushed (approx. 3436 crackers)
  • 0.25 cup unsalted butter, melted
  • 0.25 cup milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat Oven & Prep Dish: Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch casserole dish.
  2. Mix the Creamy Sauce: In a large bowl, whisk cream of chicken soup, sour cream, milk, salt, and pepper until smooth. Stir in the poppy seeds.
  3. Combine & Spread: Fold in the shredded cooked chicken until well coated. Pour this mixture into your prepared casserole dish, spreading evenly.
  4. Prepare Cracker Topping: Crush Ritz crackers finely. In a small bowl, melt butter and toss with the cracker crumbs until evenly coated.
  5. Top & Bake: Sprinkle the buttery cracker topping over the chicken mixture. Bake for 25-30 minutes, or until bubbly around the edges and the topping is golden brown.
  6. Rest & Serve: Let the casserole rest for 5 minutes before serving to allow the sauce to set.

Notes

If the casserole looks dry, splash in 1–2 Tbsp milk before baking for a creamier finish. For faster prep, use a food processor for super-fast cracker crushing. The creamy chicken mixture can also be prepared ahead and refrigerated overnight.
