- 2 cups cooked chicken breast, shredded or diced
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 Tbsp poppy seeds
- 1 sleeve Ritz crackers, crushed (approx. 34–36 crackers)
- 0.25 cup unsalted butter, melted
- 0.25 cup milk
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat Oven & Prep Dish: Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch casserole dish.
- Mix the Creamy Sauce: In a large bowl, whisk cream of chicken soup, sour cream, milk, salt, and pepper until smooth. Stir in the poppy seeds.
- Combine & Spread: Fold in the shredded cooked chicken until well coated. Pour this mixture into your prepared casserole dish, spreading evenly.
- Prepare Cracker Topping: Crush Ritz crackers finely. In a small bowl, melt butter and toss with the cracker crumbs until evenly coated.
- Top & Bake: Sprinkle the buttery cracker topping over the chicken mixture. Bake for 25-30 minutes, or until bubbly around the edges and the topping is golden brown.
- Rest & Serve: Let the casserole rest for 5 minutes before serving to allow the sauce to set.
Notes
If the casserole looks dry, splash in 1–2 Tbsp milk before baking for a creamier finish. For faster prep, use a food processor for super-fast cracker crushing. The creamy chicken mixture can also be prepared ahead and refrigerated overnight.
