  • 60 ml (0.25 cup) vegetable broth
  • 240 ml (1 cup) plain unsweetened full-fat yogurt
  • 30 ml (2 tbsp) fresh lemon juice
  • 7.5 g (1.5 tsp) sumac
  • 15 g (0.25 cup) fresh mint leaves, finely chopped, for garnish
  • 15 g (0.25 cup) fresh flat-leaf parsley, finely chopped, for garnish
  • 30 g (0.25 cup) toasted pine nuts, for garnish

Instructions

  1. Preheat Oven and Prep Potatoes: Preheat your oven to 200°C (400°F). Wash and thoroughly dry 900 g (2 lb) Russet potatoes. Cut them into roughly 2 cm (0.75 inch) wedges or cubes, aiming for even pieces so they cook uniformly. In a large bowl, toss the potato pieces with 60 ml (0.25 cup) olive oil, 5 g (1 tsp) fine sea salt, 2.5 g (0.5 tsp) black pepper, and 5 g (1 tsp) sweet paprika until each piece is beautifully coated.
  2. Roast Potatoes: Spread the seasoned potatoes in a single layer on a large baking sheet, ensuring they have space to crisp up. Roast for 30-35 minutes, flipping them halfway through, until they appear golden brown, are tender when pierced with a fork, and delightfully crispy on the outside.
  3. Cook Spiced Beef: While the potatoes roast, prepare the spiced beef. Heat 15 ml (1 tbsp) of olive oil in a large skillet over medium-high heat. Add the finely diced onion and cook for 4-5 minutes until it softens and becomes translucent. Stir in the 3 minced garlic cloves and cook for an additional minute until they smell fragrant. Add the 450 g (1 lb) ground beef to the skillet, breaking it apart with a spoon as it cooks. Continue to cook until the beef is fully browned, typically 6-8 minutes, and no pink remains.   4. Simmer Beef Mixture: Pour in 60 ml (0.25 cup) vegetable broth to the spiced beef mixture, bring it to a gentle simmer, then reduce the heat to low. Let it cook for 5 minutes, allowing the flavors to meld beautifully and the onion and garlic to fully infuse the sauce. Season the spiced beef with additional salt and black pepper to taste.
  5. Prepare Sumac Yogurt Drizzle: Whisk together 240 ml (1 cup) plain unsweetened full-fat yogurt, 30 ml (2 tbsp) fresh lemon juice, and 5 g (1 tsp) sumac in a small bowl until the mixture is smooth and creamy. Season with a pinch of salt to taste.
  6. Assemble and Serve Bowls: To assemble your perfect potato bowl recipe, divide the crispy roasted potatoes among deep individual serving bowls. Spoon a generous portion of the hot spiced beef mixture over the potatoes. Drizzle the sumac yogurt generously over the beef and potatoes.
