Ingredients
- 2 lbs Russet potatoes
- 3 large eggs
- 1 medium onion

- 0.5 tsp black pepper

Instructions
- Grate Potatoes & Onions: Use a food processor or box grater to finely grate the Russet potatoes and onion.
- Remove Excess Moisture: Place grated potatoes into a clean kitchen towel and squeeze out as much liquid as possible; this is crucial for a crisp potato kugel.
- Combine Ingredients: In a large bowl, whisk eggs. Add the squeezed potatoes, grated onion, flour, oil, salt, and pepper. Mix until thoroughly combined.
- Prepare Baking Dish: Preheat your oven to 375°F (190°C). Pour 2-3 tablespoons of vegetable oil into a 9×13 inch baking dish and preheat it in the oven until the oil shimmers.
