Description

This easy Golden Crispy Bake potato kugel delivers a beautiful aroma, with a deeply golden-brown crust and a wonderfully fluffy interior, perfect as a hearty side dish or comforting main meal.

Ingredients

Scale
  • 2 lbs Russet potatoes
  • 3 large eggs
  • 1 medium onion
  • 0.25 cup all-purpose flour (or 1:1 gluten-free baking blend for gluten-free option)
  • 0.25 cup vegetable oil (plus 23 tablespoons for pan)
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder (optional)
  • 0.25 tsp paprika (optional)

Instructions

  1. Grate Potatoes & Onions: Use a food processor or box grater to finely grate the Russet potatoes and onion.
  2. Remove Excess Moisture: Place grated potatoes into a clean kitchen towel and squeeze out as much liquid as possible; this is crucial for a crisp potato kugel.
  3. Combine Ingredients: In a large bowl, whisk eggs. Add the squeezed potatoes, grated onion, flour, oil, salt, and pepper. Mix until thoroughly combined.
  4. Prepare Baking Dish: Preheat your oven to 375°F (190°C). Pour 2-3 tablespoons of vegetable oil into a 9×13 inch baking dish and preheat it in the oven until the oil shimmers.
  5. Pour & Bake: Carefully transfer the potato mixture into the hot, oiled 9×13 inch dish, spreading evenly. Bake for 60-75 minutes until deeply golden and crispy (if the top browns too fast, tent with foil for 15 minutes).
  6. Rest & Serve: Remove from oven and let it rest for 5-10 minutes before slicing and serving. This resting period helps it set beautifully.

Notes

To speed up prep, use a food processor for grating. Combining all ingredients in one bowl minimizes cleanup. If the kugel browns too quickly, tent it with foil. For a healthier twist, reduce oil slightly or use a non-stick spray, and consider adding fresh herbs like chives or parsley for extra flavor. Yukon Golds can be used for a slightly creamier texture.
