Instructions

  1. Activate Yeast: Combine 1 cup lukewarm water (40-45°C) and 2 teaspoons sugar. Sprinkle 2.25 teaspoons yeast over; let sit for 5-10 minutes until visibly foamy.
  2. Mix Dough: Whisk 1 large egg, 0.25 cup melted butter (or oil), and 2 tablespoons melted shortening (or additional oil) into the yeast mixture. Separately, whisk 3 cups all-purpose flour and 1 teaspoon salt. Add dry ingredients to wet; mix until a shaggy dough forms.
  3. Infuse and Knead: Add 0.5 cup chopped sun-dried tomatoes and 0.25 cup chopped basil. Knead dough until smooth, elastic, and supple (8-10 minutes by hand or 5-7 minutes with a mixer). If too sticky, add flour 1 tablespoon at a time.
  4. First Rise: Lightly grease a bowl with 1 teaspoon olive oil. Transfer dough; cover tightly. Let rise in a warm spot for 30-45 minutes until visibly doubled in size.
  5. Shape Buns: Punch down dough. Divide into 6-8 equal portions (90-110g each). Shape each into a smooth, tight ball, rolling against the counter.
