Ingredients
- 350 g (2.75 cups) all-purpose flour
- 7 g (2.25 teaspoons) instant dry yeast
- 20 g (1.5 tablespoons) granulated sugar
- 5 g (1 teaspoon) fine sea salt
- 240 ml (1 cup) warm milk, dairy or plant-based, about 40 C (105 F)
- 45 ml (3 tablespoons) vegetable oil
- 10 g (2 tablespoons) Za’atar spice blend
- 40 g (3 tablespoons) unsalted butter
- 30 ml (2 tablespoons) honey
- 2.5 ml (0.5 teaspoon) alcohol-free vanilla extract
- 5 g (1 teaspoon) ground sumac
- 15 g (3 tablespoons) fresh flat-leaf parsley or mint, chopped
Instructions
- Mix and Activate Yeast: Combine warm milk, sugar, and yeast. Stir gently; let sit 5-10 minutes until foamy, showing yeast is active.
- Combine and Knead Dough: Whisk 350 g flour, 5 g salt, and 5g za’atar in a separate bowl. Add 45 ml vegetable oil to yeast mixture. Pour wet into dry; mix until a shaggy dough forms. Knead for 3-5 minutes until smooth and elastic to the touch.
- Quick Rise Dough: Lightly grease a clean bowl, then place dough in the bowl, turning once to coat. Cover; let rise in a warm spot for 20-30 minutes until it has noticeably doubled in size and feels light and airy.
- Shape the Rolls: Gently punch down the risen dough to release air. Divide into 12 pieces (approx. 50-55g); shape each into a smooth ball. Arrange in a greased 23×33 cm (9×13 inch) baking pan, leaving a small space between each.
- Bake to Golden Perfection and Glaze: Preheat your oven to 190 C (375 F). Let shaped rolls puff for about 10 minutes while the oven preheats. Bake your quick rolls for 12-15 minutes, or until the tops are golden brown and they sound hollow when tapped (internal temperature should reach 93 C (200 F)). While baking, prepare Za’atar-Kissed Honey Butter glaze: melt 40 g unsalted butter, then stir in 30 ml honey, 2.5 ml alcohol-free vanilla, and the remaining 5g za’atar. Ensure yeast is fresh; old yeast will prevent rising. Use milk at about 105 F (40 C) to activate yeast properly. Do not overcrowd the baking pan, allow space for rolls to expand. Avoid over-baking to prevent dry rolls. For a savory twist, add dried garlic powder or fresh rosemary to the dough. Can use melted unsalted butter instead of vegetable oil in the dough for extra richness. For kid-friendly rolls, use plain melted butter glaze.
