  • 2 tbsp all-purpose flour (30g, or gluten-free blend)
  • 4 cups chicken or vegetable broth (950ml)
  • 1 cup water (240ml)
  • 1 bay leaf
  • 1 tsp dried thyme (5ml)
  • Salt and freshly ground black pepper to taste
  • 1.5 lbs potatoes (680g, e.g., Yukon Gold), peeled and cubed

Instructions

  1. Prep & Sear: Pat your rabbit pieces thoroughly dry with paper towels. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Carefully add rabbit pieces in a single layer, working in batches if necessary to avoid overcrowding. Sear until well browned on all sides, about 5-7 minutes per batch. Remove the browned rabbit and set it aside on a plate.
  2. Sauté Aromatics: Reduce the heat to medium. Add the chopped onion, carrots, and celery to the pot.
