Instructions

  1. Combine Ingredients: In a medium saucepan, combine 500 g (4 cups) raspberries, 100 g (0.5 cup) sugar, 15 ml (1 tablespoon) lemon juice, and 60 ml (0.25 cup) water. Stir gently. (No need to thaw frozen berries.)
  2. Simmer Gently: Cook over medium heat for 3-5 minutes, stirring until the sugar dissolves and berries begin to soften. Reduce heat to low.
  3. Thicken and Mash: Continue to simmer for 8-10 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly. Mash the berries with a spoon for a chunky compote. (If too thick, add 1-2 tablespoons water.)
  4. Cool and Serve: Remove the compote from heat and let it cool slightly at room temperature to thicken further. Serve warm or chilled as desired.

Notes
