- 15 ml (1 tablespoon) fresh lemon juice
- 60 ml (0.25 cup) water
Instructions
- Combine Ingredients: In a medium saucepan, combine 500 g (4 cups) raspberries, 100 g (0.5 cup) sugar, 15 ml (1 tablespoon) lemon juice, and 60 ml (0.25 cup) water. Stir gently. (No need to thaw frozen berries.)
- Simmer Gently: Cook over medium heat for 3-5 minutes, stirring until the sugar dissolves and berries begin to soften. Reduce heat to low.
- Thicken and Mash: Continue to simmer for 8-10 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly. Mash the berries with a spoon for a chunky compote. (If too thick, add 1-2 tablespoons water.)
- Cool and Serve: Remove the compote from heat and let it cool slightly at room temperature to thicken further. Serve warm or chilled as desired.
Notes
For a low-calorie option, reduce sugar or use alternative sweeteners like maple syrup, honey, or stevia. Store fresh berries unwashed in the fridge. This recipe can be doubled for convenience. Compote thickens more as it cools.
