Description
This easy raspberry coulis recipe transforms simple ingredients into an elegant dessert sauce. Its vibrant color and fresh, sweet aroma instantly elevate any dish, from pancakes to cheesecake, offering a quick and family-friendly homemade elegance.
Ingredients
Scale
- 340 g fresh raspberries (or frozen organic raspberries)
- 0.25 cup granulated sugar (or erythritol for low-carb)
- 0.25 cup water
- 3–4 green cardamom pods, lightly crushed
- 1 tbsp fresh lemon juice (or lime juice)
- 1 tsp pure rose water (or vanilla extract)
- 1 tbsp shelled, unsalted pistachios, finely crushed, for garnish (optional)
Instructions
- Combine Ingredients: In a small, heavy-bottomed saucepan, combine the fresh or frozen raspberries, granulated sugar, water, and lightly crushed cardamom pods. Bring this mixture to a gentle simmer over medium-low heat, stirring occasionally until the sugar has fully dissolved and small bubbles appear around the edges.
- Simmer And Mash Berries: Continue to simmer, stirring and gently mashing the berries with a spoon or potato masher, until they soften significantly and release their juices. If the mixture appears too thick, add a tiny splash of water.
- Flavor And Cool Mixture: Remove from heat. Stir in the fresh lemon juice and pure rose water. Let the mixture cool for about 5 minutes to allow flavors to meld.
- Strain For Smoothness: Carefully pour the warm raspberry mixture through a fine-mesh sieve set over a clean bowl. Press firmly against the solids with a spatula or spoon to extract liquid. Discard pulp and cardamom pods. (Optionally skip straining for a rustic, fiber-rich sauce).
- Chill Coulis: Transfer the strained coulis to an airtight container and chill in the refrigerator for at least 2 hours, or until cold and slightly thickened.
- Garnish And Serve: Once chilled, drizzle the vibrant coulis onto a plate. Sprinkle with finely crushed pistachios for garnish, if desired.
Notes
To avoid common mistakes, do not overcook the berries to prevent it from turning into jam. The lemon juice is essential for balancing sweetness and brightening the flavor. Proper straining ensures a silky, elegant texture, though you can skip it for a rustic, fiber-rich sauce.
