Description

Easy, satisfying cheesy potatoes with hash browns casserole, perfect for busy home cooks. Features cheddar cheese, sour cream, and frozen hash browns.

Ingredients

Scale
  • 30 oz (850g) bag frozen hash browns (shredded or diced), thawed
  • 1 (10.5 oz / 298g) can cream of chicken or mushroom soup
  • 1 cup (240g) sour cream
  • 3 cups (340g) shredded cheddar cheese, divided
  • ½ cup (113g or 1 stick) melted butter
  • ½ cup (approx. 1 medium) diced onion
  • 1 teaspoon (5g) salt, or to taste
  • ½ teaspoon (2.5g) black pepper, or to taste

Instructions

  1. Step 1: Preheat and Prep
Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish. Ensure hash browns are thawed.
  2. Step 2: Combine the Creamy Base
In a large bowl, whisk together the cream of chicken/mushroom soup, sour cream, melted butter, diced onion, salt, and pepper until well combined.
  3. Step 3: Fold in Hash Browns and Cheese
Gently fold the thawed hash browns and 2 cups of shredded cheddar cheese into the creamy mixture, ensuring every bit is coated.
  4. Step 4: Bake to Golden Perfection
Pour the mixture into your prepared baking dish. Bake uncovered for 30 minutes, then sprinkle the remaining 1 cup of cheese over the top. Continue baking for another 15-30 minutes, until bubbly and golden brown.

Notes

Optional add-ins & smart swaps: Add cooked ham, bacon, or sausage for a complete meal. Swap cheddar for Colby Jack, Monterey Jack, or a sharp blend. Use gluten-free cream soup for dietary needs. For extra crunch, top with crushed cornflakes mixed with butter.

Notes on quality/seasonality: Choose full-fat sour cream for best texture. Sharp cheddar cheese offers a more pronounced flavor. Real butter makes a difference. Ensure hash browns are fully thawed for even cooking.

Troubleshooting: If the top browns too quickly, tent loosely with foil. If the casserole seems too runny, ensure hash browns were fully thawed and gently press out excess moisture if needed.
