Instructions

  2. Season and Roast: In a large bowl, toss the squash slices with 1-2 tablespoons of olive oil, salt, and pepper until evenly coated. Spread them in a single layer on a large baking sheet. Roast in a preheated oven at 400°F (200°C) for 20-25 minutes, or until fork-tender and slightly browned.
  3. Prepare the Maple Butter Glaze: While the squash roasts, combine 2 tablespoons of melted butter (or vegan alternative), 3 tablespoons of pure maple syrup, and any desired spices (cinnamon, nutmeg, cayenne) in a small bowl. Stir until the mixture is smooth and fully blended.
  4. Glaze and Finish Roasting: Remove the baking sheet from the oven. Drizzle the Maple Butter Glaze over the roasted squash slices, tossing gently to coat each piece. Return to the oven for another 5-10 minutes, or until the glaze is bubbling and slightly caramelized on the edges of the squash.
